Qualification summary

This qualification is aimed at those working or who are seeking to start a career in food and beverage service. It can be taken whilst in the workplace to allow hands on experience as you train. It develops skills for serving all types of drinks as well as food in a professional and customer focussed environment.

 

Progression

Learners may progress onto other Hospitality related qualifications such as the Level 3 Diploma in Hospitality Supervision and Leadership Skills, which forms part of an apprenticeship framework. If they are not already in employment, this qualification may enable learners to gain employment in the Hospitality industry.

Qualification Structure

To achieve the full qualification, candidates must attain a minimum of 37 credits. Candidates must achieve all four units in mandatory Group A (15 credits); a minimum of three credits from the optional units in Group B; a minimum of three credits from the optional units in Group C. The remaining 16 credits can come from any of the optional units in Groups B, C or D.

A  -  Mandatory units
Candidates must achieve all four units within this group.
Credit Value required: Minimum 15, Maximum 15.

A1 -  Optional Units
Candidates must achieve a minimum of 22 credits from the optional units in Groups B, C and D.
Credit Value required: Minimum 22.

B  -  Group B Optional Units: Food Service
Candidates must achieve a minimum of three credits from this group.
Credit Value required: Minimum 3.

Provide a counter and takeaway service
Serve food at the table
Provide a silver service
Provide a buffet and carvery service

C  -  Group C Optional units: Beverage service
Candidates must achieve a minimum of three credits from this group.
Credit Value required: Minimum 3.

Serve alcoholic and soft drinks
Prepare and serve cocktails
Prepare and serve wines
Prepare and serve dispensed and instant hot drinks
Prepare and serve hot drinks using specialist equipment

D  -  Group D Optional Units

Prepare and clear areas for counter and takeaway service
Prepare and clear the bar area
Maintain cellars and kegs
Clean drink dispense lines
Receive, store and issue drinks stock
Prepare and clear areas for table service
Maintain and deal with payments
